Za'atar is a spice blend from the Middle East and North Africa. Since za'atar is often produced locally, the ingredients may vary slightly depending on country, location and taste. A common variant of the mixture is the one we at Jord och Frihet import: it consists of dried thyme, sumac and sesame seeds. Za'atar is usually mixed in olive oil and can be brushed on bread or meat. Another traditional use is simply dipping bread in olive oil and za'atar.
Just like most of our products, Jord och Frihet imports our za'atar from the Al-Reef Fair Trade company. Al-Reef, originally from the large NGO Palestinian Agricultural Relief Committees, PARC, works largely with small farmers and cooperatives in the West Bank and Gaza. The thyme used in Al-Reef's za'atar is grown by women's cooperatives in the central and northern West Bank, and the product is finished, inspected and packaged in a factory in Jericho.
